BEST EGG, SAUSAGE AND CHEESE BAKE

INGREDIENTS:

  • 2 teaspoons olive oil
  • 1 lb. Italian pork sausage (I used the Whole Foods brand)
  • 1 lb. frozen spinach, whole leaves
  • 1 pint cherry tomatoes, halved
  • 1 tablespoon minced garlic
  • ½ teaspoon kosher salt, divided
  • ¼ teaspoon black pepper, divided
  • 8 large eggs
  • ½ cup shredded Monterey Jack (or cheddar) cheese

DIRECTIONS:

  1. Preheat oven to 400 degrees F. Grease a 2-quart casserole dish with 1 teaspoon olive oil.
