EASY ITALIAN POTATO CAKES

INGREDIENTS:

2 C. leftover mashed potatoes
2 T. diced onion
2 T. parmesan cheese
1/2 tsp. italian seasoning
1/8 tsp. garlic powder
1 large egg, lightly beaten
1/4 – 1/3 C. all purpose flour
vegetable oil for frying

DIRECTIONS:

In a mixing bowl, combine the potatoes, onion, cheese and seasonings. Stir in the egg and combine well. Stir in 1/4 C. flour and add a little more, if needed, to tighten up the potatoes (not overly stiff though). Heat 1/4″ of oil in a skillet over med. high heat.
