SPECIAL SAUSAGE POTATO CHEDDAR SOUP

INGREDIENTS:

1 lb lean ground sausage

2 russet potatoes cut in small cubes

1 small onion chopped

2 stalks celery chopped

2 large carrots chopped

1/2 teaspoon garlic powder

1/2 teaspoon onions powder

1/4 -1/2 teaspoon crushed red pepper (to taste)

1/4 teaspoon cayenne pepper

1/4 cup flour

4 cups chicken broth

1 cup whole milk

2 cups finely shredded cheddar cheese (NOT lowfat)

Salt & pepper to taste

Toppings
  • Sour cream
  • Shredded cheddar
  • Chopped green onions

INSTRUCTIONS:

  1. In large stock pot over medium low heat brown sausage. When sausage is close to being browned add potatoes, onions, celery, carrots, garlic powder, onion powder, crushed red pepper and cayenne pepper.
