SPECIAL GUACAMOLE SALAD DRESSING

This Mexican guacamole salad dressing is essentially a creamy avocado dressing with fresh cilantro, lime juice, onion, serrano pepper for spice, and cream.

When I have salad I tend to take the ranch route because I love the way it clings to the lettuce leaves and vegetables. And well itā€™s ranch and ranch dressing is just plain awesome. The downside is that it isnā€™t so easy to whip up on a whim. Since Iā€™ve been consuming my weight in avocados lately I wanted to make a salad dressing out of a few ripe avocados that only had a day or so before they became too soft and inedible.

This recipe was simple to make, and tasted great. The only thing I would suggest, blend all the ingredients together before you add the whipping cream or you will have guacamole flavored whipping cream like I did. My family loved it.

INGREDIENTS

1 large avocado ā€“ peeled, pitted, and mashed
1 cup heavy whipping cream
1 tablespoon lime juice
1 tablespoon chopped cilantro
1 tablespoon chopped onion
1/2 serrano pepper, seeded and deveined, or to taste
1 small clove garlic
1 teaspoon salt
1/8 teaspoon white sugar
