BEST EGG, SAUSAGE AND CHEESE BAKE
INGREDIENTS:
- 2 teaspoons olive oil
- 1 lb. Italian pork sausage (I used the Whole Foods brand)
- 1 lb. frozen spinach, whole leaves
- 1 pint cherry tomatoes, halved
- 1 tablespoon minced garlic
- ½ teaspoon kosher salt, divided
- ¼ teaspoon black pepper, divided
- 8 large eggs
- ½ cup shredded Monterey Jack (or cheddar) cheese
DIRECTIONS:
- Preheat oven to 400 degrees F. Grease a 2-quart casserole dish with 1 teaspoon olive oil.
