BEST TACO CORNBREAD CASSEROLE
This was actually quiet delicious, and easy. I only used 1 lb of hamburger, so I added 1 cup of black beans. I used Fire Roasted Tomatoes. Since we like spicy, I used Hot Taco Mix, added a fresh jalapeno, and fresh cilantro. I used the Jiffy Cornbread mix, and it seemed really thick and was hard to spread, but came out great! My boyfriend really liked this recipe, and I will definitely make it again.
A whole can of chilies adds fire to this cornbread casserole. For less heat, you can use just enough of the can for your taste.
The cornbread and beef bake together in one casserole dish, making this entree convenient. Itâs packed with tempting seasonings, and the cheese and onions make an attractive topping.
Simple, easy and cheesy! This is a whole meal! You donât need any side dishes or salads. This will do. Give it a shot, itâs worth it.
YOUâLL NEED:
1 package of cornbread/muffin mix.
3 cups of cooked taco seasoned meat.
1 (8 oz) cup of light sour cream.
1 cup of colby jack, cheddar or mexican cheese, shredded and divided.
½ cup of chopped onion.
1 medium chopped tomato.
1 cup of shredded lettuce.
HOW TO:
Prepare the cornbread in a large bowl according to the package instructions then spread it in an 8Ă8 sprayed pan.
In a preheated oven to 350°, bake the cornbread for 20 minutes.
In a bowl, mix together the sour cream, ž cup of cheese and onion.
Spread the meat over the cornbread then top with the creamy mixture âŚ
